This zingy citrus cookie recipe is an exciting take on traditional biscuits. The addition of lemon, lime and orange to the mix adds a beautiful, tangy essence to them. The combination takes this simple, easy cookie recipe and elevates it to excellence. Try it!
Ingredients
- 550g butter, softened
- 350g sugar
- 2 large eggs, separated
- 600g plain flour
- 4 tbsp orange, lemon and lime zest
- 2 tbsp orange, lemon and lime juice combined
- 450g icing sugar
- 2 tbsp milk
- juice of 1/2 lime (for icing)
- juice of 1/2 lemon (for icing)
- salt
Instructions
- Preheat the oven to 180C/350C.
- Cream the butter and sugar until light and fluffy.
- Add the egg yolks and mix until combined.
- Add half the orange, lemon and lime zest to the flour and mix until just combined,
- Add orange, lemon and lime juice and combine.
- Portion out the butter mix and roll each portion into balls.
- Place on a baking sheet and bake for 13 minutes.
- Remove from the oven and keep on the baking sheet for a further 3 to 4 minutes to allow them to set.
- Remove from the baking sheet and set aside to cool completely.
10. To make the icing, combine 1 egg white with the icing sugar, milk, the rest of the zest, lemon and lime juice and a pinch of salt to a bowl.
11. Whisk until combined, adding either more powdered sugar or more juice until it reaches a thick consistency.
12. Pipe or drizzle the icing over the biscuits in a criss-cross fashion.
