If you’re looking for an Italian dessert with a unique flavour, then this Ricotta pie recipe is just for you. This easy pie recipe is one of the oldest Italian desserts and has the potential to be the only pie your family may want. It is also versatile, so you can add strawberries, mini chocolate bits, or lemon rind to the batter for extra flavour.

Ingredients

  • 680 g ricotta cheese
  • 20 g chocolate chips
  • 8 eggs
  • 300 g white sugar
  • 250 g all-purpose flour
  • 10 g baking powder
  • 8 ml vanilla extract
  • 50 g shortening

Instructions

  1. Heat the oven to 165 degrees Celsius (325 degrees Fahrenheit).
  2. Beat 6 eggs, 200 g sugar and 5 ml vanilla extract well. Add the ricotta cheese and the chocolate chips to the mixture and stir the mixture a few times.
  3. Add the flour, baking powder and 100 g of sugar into a mixing bowl and stir well. Cut cubes of shortening and add them to the bowl. Blend all until the mixture looks like coarse crumbs. Break 2 eggs and add a teaspoon of vanilla to the mix. Finally, divide the dough into two balls and chill them.
  4. Roll out one of the balls to fit into the pie pan. Make sure that the crust isn’t thick because it will expand while baking and become very thick. Also avoid fluting the edges of the dough. Roll out the second balls and cut 8 narrow strips for the top of the crust.
  5. Pour the filling into the pie crust and top it with the strips of dough. Brush the strips with milk to add a shine to your pie, and place foil on the crust’s edges.
  6. Bake the pie for 20-30 minutes. Remove the foil and then allow it to bake for additional 25-30 minutes.
