Apple Enchilada

This Apple Enchilada recipe is something a little different. I love spicy food, but sometimes traditional desserts just don’t hit the mark after a good chilli. Nothing beats complementing your Mexican meal with a Mexican dessert. Here’s a dish that doesn’t require you spending much time in the kitchen and can be made with apples, peaches, cherries or any seasonal fruit you like.

Ingredients

  • 2 g ground cinnamon
  • 65 g white sugar
  • 75 g brown sugar
  • 50 g margarine
  • 80 ml water
  • 4 flour tortillas
  • 400 g apple pie filling

Instructions

  1. Heat your oven to 175 degrees Celsius (350 degrees Fahrenheit).
  2. Place the tortillas on your counter and use a spoon to spread the fruit filling onto them. Sprinkle with cinnamon and then roll them up.
  3. Set the tortillas seam side up on a lightly greased baking pan.
  4. Add margarine, white and brown sugars and water into a medium-sized pan. Once the mixture boils, reduce the heat and allow it to simmer for 3 minutes.
  5. Pour the sauce you just prepared onto the tortillas and sprinkle extra cinnamon on top if you want.
  6. Bake the tortillas in their sauce for 20 minutes.
  7. If you used 8-inch tortillas, you will have 4 large apple enchiladas. You can cut them in half and serve 8 to your family instead because everyone will demand more.
