Spicy Indian Chicken

This spicy Indian chicken recipe is a flavoursome addition to any dinner, party or at any time. It’s simple, tasty, and can be spiced to all tastes.

Ingredients

  • 12 chicken drumsticks, skin removed
  • 1 tbsp crushed garlic
  • 1 tbsp crushed root ginger
  • 1 tbsp finely chopped chilli
  • 3 tsp salt
  • 3 heaped tsp dharnia jeera
  • 2 tsp hot chilli powder
  • 1 tsp sugar
  • 3-4 tsp tandoori masala powder
  • ½ tsp turmeric
  • 9 tbsp olive oil
  • 3 tbsp vinegar
  • 3-4 tbsp natural yoghurt
  • 3 tbsp dried coriander leaves

Instructions

  1. Deeply score each chicken piece and place in an oven proof dish.
  2. Combine the rest of the ingredients except the coriander to create the marinade. Coat the chicken, sprinkle over the coriander, then leave to marinate overnight.
  3. When ready to cook, preheat the oven to 190°C/gas mark 5.
  4. Bake the chicken for an hour, or until cooked through.
  5. Serve with rice.
