This Lasagne Soup recipe is something a little different. It looks like a lasagne but tastes like a cross between it and pizza. It’s ideal for winter, quick to make and delicious to eat.
Ingredients
- 700g chicken stock
- 440g passata
- 480g water
- 3 tablespoons finely chopped pepperoni
- 2 tsp chopped fresh oregano
- 3 portions of medium egg noodles
- 18 meatballs (recipe here)
Instructions
- Make the meatballs according to the recipe here and set aside.
- Bring the chicken broth or stock, tomato sauce and water to a simmer in a pot.
- Add the rest of the ingredients and bring to a simmer uncovered for 10 minutes, or until the noodles are cooked through and meatballs are hot.
- Serve with parmigiana garnish
