Lasagne Soup

This Lasagne Soup recipe is something a little different. It looks like a lasagne but tastes like a cross between it and pizza. It’s ideal for winter, quick to make and delicious to eat.

Ingredients

  • 700g chicken stock
  • 440g passata
  • 480g water
  • 3 tablespoons finely chopped pepperoni
  • 2 tsp chopped fresh oregano
  • 3 portions of medium egg noodles
  • 18 meatballs (recipe here)

Instructions

  1. Make the meatballs according to the recipe here and set aside.
  2. Bring the chicken broth or stock, tomato sauce and water to a simmer in a pot.
  3. Add the rest of the ingredients and bring to a simmer uncovered for 10 minutes, or until the noodles are cooked through and meatballs are hot.
  4. Serve with parmigiana garnish
