Chinese Roast Pork

This Chinese roast pork recipe one of my favourites. It’s a version of Char siu, a sweet Chinese marinade used on pork to great effect. I’m not a big fan of pig, bit this takes some beating.

Ingredients

  • 1 shallot
  • 6 cloves garlic
  • 4 tablespoons ginger
  • 1/2 cup oyster sauce
  • 1/4 cup hoisin sauce
  • 2 tablespoons tomato purée
  • 2 pork tenderloins,  skin removed
  • 1 teaspoon vegetable oil

Instructions

  1. Make the marinade first, so put shallots, garlic and ginger in a blender and purée.
  2. Add the oyster sauce, hoi sin sauce and tomato purée, stir together until mixed.
  3. Place tenderloins in a baking dish, marinate pork with half of the marinade.
  4. Leave to marinate in fridge overnight.
  5. Preheat oven to 200C when ready to cook.
  6. Heat oil in large, pan over medium to high heat.
  7. Place pork tenderloins in pan, sear on all sides.
  8. Baste pork with remaining marinade.
  9. Place in oven until cooked through which will be around 20 minutes.
  10. Allow to rest before serving.
