This Chinese roast pork recipe one of my favourites. It’s a version of Char siu, a sweet Chinese marinade used on pork to great effect. I’m not a big fan of pig, bit this takes some beating.
Ingredients
- 1 shallot
- 6 cloves garlic
- 4 tablespoons ginger
- 1/2 cup oyster sauce
- 1/4 cup hoisin sauce
- 2 tablespoons tomato purée
- 2 pork tenderloins, skin removed
- 1 teaspoon vegetable oil
Instructions
- Make the marinade first, so put shallots, garlic and ginger in a blender and purée.
- Add the oyster sauce, hoi sin sauce and tomato purée, stir together until mixed.
- Place tenderloins in a baking dish, marinate pork with half of the marinade.
- Leave to marinate in fridge overnight.
- Preheat oven to 200C when ready to cook.
- Heat oil in large, pan over medium to high heat.
- Place pork tenderloins in pan, sear on all sides.
- Baste pork with remaining marinade.
- Place in oven until cooked through which will be around 20 minutes.
- Allow to rest before serving.
