Sausage Rolls

I love sausage rolls, either fresh from the oven while steaming hot, or warmed up and served with some chips and ketchup. I love Christmas because I can eat as many as I want and nobody says a word. These have a little Christmas twist as they have cranberry and orange in them too.

Ingredients

  • 1 sheet puff pastry bought or made. (Recipe here)
  • 400g  good-quality pork sausages
  • 30g dried cranberries, chopped
  • Grated zest of 1 small orange
  • 2tsp fresh thyme leaves
  • Salt and pepper
  • 1 medium egg, beaten

Instructions

  1. Set the oven to gas mark 6 or 200°C.
  2. Unroll the pastry on to a lightly floured surface and roll it out to a rectangle about 35 x 25cm.
  3. Cut it in half lengthways to give 2 long pieces.
  4. Slit the skin of the sausages, peel it off and put the meat in a bowl with the cranberries, orange zest, thyme leaves and a little seasoning.
  5. Mix well, then make 2 long sausages from the mixture and place each one down the middle of the 2 strips of pastry.
  6. Brush one of the long edges with egg.
  7. Bring the other pastry edge over the filling and make into a cylinder.
  8. Press edges together well, then press the edges and decorate with a fork.
  9. Cut into 6 rolls.
  10. Do the same with the other piece of pastry and filling.
  11. Put the rolls on to a large baking sheet, score the tops, brush with egg .
  12. Bake for 20-25 mins, until golden brown.

Quick Notes

You can make the pastry yourself, or buy ready-made puff pastry. Only the purist would ever know the difference.
