Absinthe, The French Method

Oscar Wilde is one of my heroes, he was a bit of a rebel, unconventional and liked a bit of a drink. His tipple of choice was absinthe, recently immortalised in the movie Moulin Rouge. It’s a mysterious drink that used to be associated with mystical qualities. Although you can buy it here in the UK, it isn’t always the authentic stuff. I used to drink it a lot, and had it imported from Poland at something like 70 proof. In honour of this most glorious of drinks, here is how to properly prepare the drink in the French Method. Try it, and meet the Green Fairy yourself.

Ingredients

  • 1 1/2 oz. Absinthe
  • 1 sugar cube
  • crushed ice

Instructions

  1. Use a tea strainer over a short glass. Pour the Absinthe into the glass then place the strainer, with sugar cube inside over it.
  2. Pack a mound of ice on top of the sugar. When the ice has melted, the drip is ready.
