Chicken Satay

This chicken satay recipe is surprisingly easy to do. It’s one of our favourite starters when we eat out, so it’s only right that we make it at home too.

Ingredients

  • 2 tablespoons smooth peanut butter
  • 7 tablespoons soy sauce
  • 7 tablespoons lemon juice
  • 1 tablespoon brown soft sugar
  • 2 tablespoons curry powder
  • 2 cloves garlic, chopped
  • 1 teaspoon Tabasco
  • 6 chicken breast fillets

Instructions

  1. Combine peanut butter, soy sauce, lime juice, sugar, curry powder, garlic and hot sauce in a bowl. Add the chicken to it and refrigerate overnight.
  2. Slice the chicken into strips and thread onto bamboo skewers. Paint a little more marinade on them before placing them under the grill for 5 minutes per side.
  3. Use the remaining marinade as a dip and serve with a little salad or on it’s own.
