I love red food, the spicier the better. Beef Fajitas are a Mexican classic that will never go out of fashion. You can chop and change the ingredients as you see fit and best of all, you eat with your hands. How cool is that?
Ingredients
- 1 tablespoon peanut oil
- 1 onion, chopped
- 2 cloves chopped garlic
- 200g beef steak, sliced thinly
- 1 cup bell peppers, sliced
- 1 lime, juiced
- 1 teaspoon chilli
- 1 teaspoon cumin
- salt and pepper
- 4 fajita wraps
Instructions
- Warm the wraps while you’re preparing the filling. Some need oven time, others can be microwaved.
- Heat the oil in a large pan on a high heat
- Add the garlic, onion and beef and allow to cook stirring constantly for a couple of minutes.
- Add the red peppers and the rest of the ingredients. Cook a further 1 – 2 minutes.
- Taste and adjust seasoning.
- Remove from the heat and divide the mixture between the fajita wraps, roll up and serve.
- Top with sour cream, cheese, guacamole or anything you fancy.
