Chicken Chow Mein is a classic Chinese dish that’s so versatile and easy to make it would be a crime for you not to try it.
Ingredients
- 225g medium egg noodles
- 50g Parma ham, shredded
- 100g skinned chicken breast
- 2½ tbsp finely chopped garlic
- 50g mangetout, trimmed
- 2 tsp light soy sauce
- 2 tsp dark soy sauce
- 1 tbsp Shaoxing rice wine or dry sherry
- 2 tbsp sesame oil
- ½ tsp salt
- ½ tsp white pepper
- ½ tsp sugar
- 3 tbsp chopped spring onions
- 2 tsp sesame oil
For the marinade
- 2 tsp light soy sauce
- 2 tsp Shaoxing rice wine or dry sherry
- 1 tsp sesame oil
- ½ tsp salt
- ½ tsp white pepper
Instructions
- Cook the noodles first, by boiling them for 3-5 minutes in a pan of boiling water. Drain and place into cold water, drain, then cover with a little sesame oil.
- Slice the chicken breasts into strips, then combine with the light soy sauce, rice wine, sesame oil, salt and pepper in a bowl. Mix well and leave to marinate for a while.
- Heat a wok until it’s smoking . Add one tablespoon of oil and add the chicken.
- Stir-fry for two minutes, then transfer to a plate.
- Reheat the wok, and add the remaining oil. Add the garlic and stir-fry for 10 seconds. Add the mangetout and ham and fry for a minute.
- Add the noodles to the wok, light soy sauce, dark soy sauce, rice wine, salt and pepper, the sugar and spring onions and continue to stir-fry for a further two minutes.
- Return the chicken to the wok and continue to fry for 3-4 minutes, until the chicken is cooked through.
- Stir in sesame oil, turn onto warm plates and serve at once.
You can change to rice noodles if you like for a finer result, just alter the cooking time accordingly. Swap chicken for pork or beef, Char Sui pork works well here.
