Chilli

Chilli is one of my all time favourite dishes. This recipe is a base from which you can grow, a foundation upon which you can build your own dish. Anyone who makes their own chilli does exactly the same thing. They learn how to make the basic recipe, then build on it themselves, adding or taking away as their taste dictates. It’s best, whenever possible, to make this the day before and allow to sit in the pot with the lid on overnight. The flavours infuse and mature, making this a more rounded meal.

Ingredients

  • 500g bacon, chopped
  • 2 onions, chopped
  • 1 clove garlic, separated, peeled and sliced
  • 2 red peppers, chopped
  • 3 -5 teaspoons chilli powder
  • 2 heaped teaspoons paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon Worcester sauce
  • 1 kg  beef mince
  • 2 x 28 ounce cans tomatoes
  • 540g  kidney beans
  • Salt and pepper

Instructions

  1. Heat a large pan over medium heat and add the bacon.
  2. Allow to brown slightly then add the onions, garlic and peppers.
  3. Cook until they are softened and the onions lighten.
  4. Add chilli powder, paprika, cumin, Worcester sauce and the beef and mix well.
  5. Add tomatoes and season with salt and pepper.
  6. Simmer for half an hour.
  7. Add the kidney beans and season to taste.
  8. Cook for a further 20 minutes then allow to cool.

Add or take away spices as you see fit. Try different strength chilli powder and paprika or even add fresh chillies if you like things hot.
