Tomato soup is one of the easiest, yet most comforting foods out there. Served warm with a dollop of cream and a hunk of fresh bread, it can’t fail to make you feel all warm inside. This version adds a little more warmth to the mix with crushed chillies.
Ingredients
- 2tbsp vegetable oil
- 1 onion, roughly chopped
- 125g (4oz) celery stick, chopped
- 1 garlic clove, crushed
- 2tsp dried mixed herbs
- 1tsp dried crushed chilli
- 400g (13oz) can chopped tomatoes
- 600ml (1pt) vegetable stock
Instructions
- Heat the oil in a heavy-based pan. Add the onion, celery, garlic, mixed herbs and chilli and cook over a medium heat for 5 minutes.
- Add the tomatoes and stock to the pan. Bring to the boil, cover then simmer for 25 minutes.
- Serve the soup in warm bowls accompanied with chunks of home-made bread.
