Lime and Lemongrass Chicken Burgers

This Thai twist on a traditional chicken burger recipe is just the ticket when you fancy something other than beef. It’s tangy and terrifically tasty.

Ingredients

  • 1 onion
  • 1 clove garlic
  • 1 stalk of fresh lemongrass
  • 400g minced chicken
  • 60g white breadcrumbs
  • 2 tbsp chopped coriander
  • 2 tsp finely grated lime zest
  • 1 tbsp fish sauce
  • 2 tsp caster sugar
  • light-flavoured oil

Instructions

  1. Peel and grate the onion and peel and crush the garlic.
  2. Finely chop the white part of the lemongrass, then place with the chicken, onion, breadcrumbs, garlic, coriander, lime zest, fish sauce and sugar into a bowl and mix.
  3. Shape into 4 patties, then cover or wrap in cling film and refrigerate for at least a couple of hours.
  4. Heat a barbecue or grill and brush the burgers with a little oil.
  5. Cook for 5 minutes each side or until cooked through.
  6. Serve the burgers on rolls with salad, cheese, mayonnaise or whatever you like.
