This is one of those recipes where the result far outweighs the effort that goes into creating it. That makes it too good to be ignored. Fed up with cornflakes? Try this instead.
Ingredients
- 2 x 15ml tablespoons olive oil
- 2 thick slices of your bread of choice. Think Ciabatta or rustic breads.
- 1 ripe tomato (approx. 100g), roughly chopped
- salt and pepper to taste
Instructions
- Drizzle olive oil over each piece of toast and top with the chopped tomatoes.
- Season with salt and pepper to taste,
- Drizzling a few drops of oil on top.
Variations
Use avocado instead of tomato if you fancy something a little tangy.
