Peri Peri Chicken

I couldn’t provide barbecue chicken recipes without mentioning peri peri, or piri piri, call it what you will. The combination of ginger, chilli and lemon juice give these the most beautiful tang. A symphony in mouthwatering loveliness.

Ingredients

  • 4 tablespoons paprika
  • 2 tablespoons chilli powder
  • 225ml (8 fl oz) fresh lemon juice
  • 3 cloves garlic, minced
  • 1 dessertspoon chopped fresh ginger
  • 1 1/2 teaspoons salt
  • 4 n chicken breasts

Instructions

  1. Stir together the paprika, chilli powder, lemon juice, garlic, ginger and salt in a bowl.
  2. Rub the chicken with the mixture,  and marinate for as long as possible.
  3. Put chicken onto the barbecue or grill and cook for about 30 minutes, turning occasionally, until the skin is slightly charred and juices run clear.
