I couldn’t provide barbecue chicken recipes without mentioning peri peri, or piri piri, call it what you will. The combination of ginger, chilli and lemon juice give these the most beautiful tang. A symphony in mouthwatering loveliness.
Ingredients
- 4 tablespoons paprika
- 2 tablespoons chilli powder
- 225ml (8 fl oz) fresh lemon juice
- 3 cloves garlic, minced
- 1 dessertspoon chopped fresh ginger
- 1 1/2 teaspoons salt
- 4 n chicken breasts
Instructions
- Stir together the paprika, chilli powder, lemon juice, garlic, ginger and salt in a bowl.
- Rub the chicken with the mixture, and marinate for as long as possible.
- Put chicken onto the barbecue or grill and cook for about 30 minutes, turning occasionally, until the skin is slightly charred and juices run clear.
