Barbecued Peanut Chicken

Continuing on the Asian barbecue theme, I give you Barbecued Peanut Chicken. This recipe is for those times when you have unannounced guests and want something quick and delicious.

Ingredients

  • 2 tablespoons of decent peanut butter
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon curry powder
  • 2 teaspoons soy sauce
  • 1 chopped clove of garlic
  • cayenne pepper
  • 4 chicken breast fillets

Instructions

  1. Mix everything into a bowl and mix. If you’re not in a hurry, leave to marinade for as long as possible. If you’re in a hurry don’t worry.
  2. Remove the chicken but keep the leftover marinade.
  3. Put chicken on the barbecue for 6 to 10 minutes.
  4. Turn the chicken, and brush it with remaining marinade.
  5. Grill for a further 6 to 10 minutes, or until fully cooked.
