American Pancakes

In honour of the July 4th Holiday I offer this humble recipe on behalf of our continental cousins. I suggest anyone who visits the USA to try them at least once, in the meantime, what about having a go at making your own?

Ingredients

  • 225g plain flour
  • 1 tablespoon baking powder
  • pinch of salt
  • 1 teaspoon sugar
  • 2 large eggs, beaten
  • 30g butter, melted and cooled
  • 300ml milk
  • butter for frying

Instructions

  1. Add the the flour, baking powder, salt and sugar to a bowl, make a well and beat in the eggs, melted butter and milk, and transfer to a jug
  2. Cover and leave 20 minutes before using it to break down the starches.
  3. When cooking the pancakes, remember that when the upper side of the pancake is blistering  it’s time to cook the other side.
  4. Plate up, cover in maple syrup, sugar or anything you like.
  5. Enjoy!
