Tomato and Olive Salad

Ingredients

  • 5 large ripe tomatoes, sliced into wedges
  • 1 cup Calamata style olives, pitted
  • 1 red onion, peeled and thinly sliced
  • Zest and juice of 1 lemon
  • 1/4 cup extra virgin olive oil
  • 1 bunch chopped flat leaf parsley
  • Salt and pepper

Method

  1. Toss all the ingredients together in a medium-sized salad bowl.

This is about as easy as food gets. The taste belies the ease in which it’s prepared.
