Ingredients
- 5 large ripe tomatoes, sliced into wedges
- 1 cup Calamata style olives, pitted
- 1 red onion, peeled and thinly sliced
- Zest and juice of 1 lemon
- 1/4 cup extra virgin olive oil
- 1 bunch chopped flat leaf parsley
- Salt and pepper
Method
- Toss all the ingredients together in a medium-sized salad bowl.
This is about as easy as food gets. The taste belies the ease in which it’s prepared.
